Tasting notes: jasmine, peach and bergamot
Guji lots grow slowly at high altitude, and the washed process keeps their flavours transparent. Expect a jasmine aroma as the water hits the grounds, the sweetness of ripe peach as it cools, and a bergamot finish that recalls Earl Grey tea. The body is delicate and silky, with a lively citrus acidity and no bitterness when it is brewed with care.
We stop this Ethiopian lot early, just after first crack. Stopping there keeps the floral character that a darker profile would cover with caramelised sugars.
How to brew Morning Light as pour-over
Floral Ethiopian beans shine in a paper filter. In a ceramic V60 dripper, use 15 g of medium-fine grounds for 250 g of water at 94 to 96 °C, bloom for 40 seconds and finish in about 3 minutes.
