Ember espresso: medium-dark espresso blend for flat white
Ember is the espresso blend we pull on our own bar: natural Brazil for sweetness and body, washed Ethiopia for a bright top note, roasted medium-dark. It is silky in a flat white and sweet on its own.

Tasting notes: hazelnut and orange
The first sip is toasted hazelnut, from the Brazil component. Then the Ethiopia lifts it with orange, which keeps the shot lively instead of flat. Acidity is moderate, body is creamy, and the aftertaste is long and nutty. A medium-dark roast gives enough caramelisation for milk without the smoke of a dark one.
An espresso blend made for the flat white
A flat white is a double shot under a thin layer of steamed milk, so the beans have nowhere to hide. Ember was blended for exactly that drink: the hazelnut comes forward, the orange stays present, and the texture is velvety. It works just as well in a cappuccino or as a straight double.
Espresso recipe for Ember
Dose 18 g, yield 38 g, in 28 to 32 seconds at 93 °C. If the shot is sour, grind finer; if it is bitter and dry, grind coarser. Rest the beans 7 to 10 days after the roast date. The Hand grinder Duo has settings fine enough for this, and the brewing guide covers dialling in step by step.
Ember or Dark Harbour?
Pick Ember if you like a sweeter, medium-dark profile with some fruit. Pick Dark Harbour if you want heavier cocoa and more smoke. Both are sold as whole bean or ground to order, in a resealable 250 g bag, and both can be put on a subscription.
