Good decaf starts with good green beans. These come from Colombia and keep the sweetness of the origin: toffee first, then ripe plum, with a soft, clean finish. The body is medium and the acidity gentle. Served blind, most guests in our shop do not guess that the caffeine is gone.

What is sugarcane process decaf?

The sugarcane process uses ethyl acetate, a compound made by fermenting sugarcane, which grows next to the farms in Colombia. The green beans are steamed, rinsed with this solution until the caffeine is removed, then steamed again and dried. It is gentler than older methods, so the beans keep their sugars and their fruit, and it is why this decaf tastes sweet instead of papery.

A Colombian decaf for evenings

Quiet Hours is the bag for after dinner, for late work, and for anyone cutting down on caffeine without giving up the ritual. A medium roast makes it flexible: 15 g for 250 g of water as pour-over, a 4-minute French press, or an espresso of 18 g in and 36 g out. Decaffeinated beans grind a little faster, so go one step finer than usual. All recipes are in the brewing guide.
